The New Year holidays are coming soon, and traditionally, the usual salads like Olivier and herring under a fur coat appear on holiday tables. However, to diversify the holiday menu and take a new look at familiar ingredients, there are many other interesting recipes.

That is why “Pryamiy” has put together a selection of unusual potato salads for your table.

As is known, potatoes remain one of the key ingredients of the New Year’s table due to their satiety and versatility. The selection presents both interpretations of well-known salads and less familiar options without mayonnaise, with fish, herbs and dressings based on oil or yogurt.

Special attention is paid to salads, which can be served both cold and warm, as well as dishes suitable for a vegetarian menu.

Potato, pea and mint salad

A refreshing potato salad with a creamy yogurt dressing, green peas, and mint. Light and flavorful, it’s perfect as a snack or side dish for a holiday table.

Ingredients;

  • Potatoes – 1 kg;
  • Green peas (frozen) – 2 ½ cups;
  • Edamame beans – 2 ½ cups;
  • Pistachios – ¾ cup;
  • Feta cheese – 200 g;
  • Greek yogurt – 250 ml;
  • Mint – to taste;
  • Salt – to taste;
  • Water – as needed.

Cooking method:

  1. Boil the potatoes until cooked, cool and cut into thick slices.
  2. Cook the peas and edamame in salted boiling water for 2–3 minutes, then cool.
  3. Place potatoes, peas, edamame, feta, pistachios, and mint leaves in a large bowl.
  4. Add Greek yogurt, salt to taste, and mix gently before serving.

French potato salad with vinaigrette

Potato salad without mayonnaise with a light sourness and aromatic dressing based on wine, lemon juice and mustard. Suitable as a side dish for fish or meat.

Ingredients:

  • Potatoes – 1 ½ kg;
  • Dry white wine – ¼ cup;
  • Olive oil – ¾ cup;
  • Dijon mustard – 1 tsp;
  • Lemon juice – 2 tbsp. l.;
  • Shallots – 2 pcs.;
  • Garlic – 1 clove;
  • Capers – 2 tbsp. L.;
  • Parsley – 2 tbsp. l.;
  • Salt – to taste;
  • Pepper – to taste;

Cooking method:

  1. Boil the potatoes in their skins until soft and cool slightly.
  2. In a bowl, mix olive oil, wine, lemon juice, mustard, salt, and pepper.
  3. Finely chop the shallot and garlic, add to the dressing.
  4. Chop the potatoes, add to the sauce along with the capers and herbs, and mix gently.

German potato salad with bacon

Warm potato salad with crispy bacon and sweet and sour dressing. A hearty dish that is often served as a stand-alone dish.

Ingredients:

  • Potatoes – 3 cups;
  • Bacon – 4 slices;
  • Onion – 1 pc.;
  • Vinegar – ¼ cup;
  • Water – 2 tbsp. l.;
  • Sugar – 1 ½ tbsp. l.;
  • Salt – 1 tsp;
  • Black pepper – to taste;
  • Parsley – for serving.

Cooking method:

  1. Boil the potatoes until cooked, cool and chop.
  2. Fry the bacon until crispy, set aside.
  3. Fry the finely chopped onion in the bacon fat.
  4. Add vinegar, water, sugar, salt and pepper, bring to a boil.
  5. Add potatoes and some bacon, heat for a few minutes.
  6. Before serving, sprinkle with herbs and remaining bacon.

Simple salad of new potatoes and green onions
